Salsa

Pineapple:

  • 1 cup diced fresh pineapple

  • ¼ cup diced red onion

  • ½ jalapeno, diced

  • Juice and zest of lime

  • ½ cup cilantro

  • 1 clove minced garlic

  • ¼ teaspoon sea salt
     

  • In a medium bowl, combine the pineapple, red onion, jalapeño, lime juice and zest, cilantro, garlic, and sea salt. Season to taste and chill until ready to use.
     

Mango:

  • 1 medium ripe mango, peeled, pitted, and diced

  • ¼ cup diced red onion

  • ¼ cup finely chopped cilantro

  • Juice and zest of 1 lime

  • 1 small garlic clove, grated

  • ½ jalapeño, minced

  • ¼ teaspoon sea salt

  • In a medium bowl, mix together the mango, onion, cilantro, lime juice, garlic, jalapeño, and salt. Chill until ready to use.

Original:

  • 2 tomatoes, diced

  • 1 clove of garlic, minced

  • ¼ cup diced red onion

  • ¼ cup chopped green onions

  • juice & zest of 2 small limes

  • 1-2 teaspoons chili paste

  • ½ teaspoon olive oil

  • salt & pepper

  • ½ teaspoon ginger, minced (optional)
     

  • Mix all ingredients together. Let it sit for at least 15 minutes for the flavors to come together. Taste and adjust seasonings.
