Peanut butter cookie bars (no baking)

Cookie layer:

  • ½ cup peanut butter

  • ¼ cup melted coconut (or almond) oil

  • ¼ cup maple syrup (honey)

  • 2 tsp vanilla extract

  • ½ tsp sea salt

  • 2½ cups almond or coconut flour

  • 1 cup chocolate chips

Cocoa layer:

  • 1½ cups walnuts

  • 2 tbsp cocoa powder

  • ¼ tsp sea salt

  • 10 soft dates

  • 2 tbsp water

  1. Line a plastic container with parchment or foil paper. Stir together all the cookie layer ingredients until combined. Fold in the choco chips and press into the container. Place in the freezer to firm up while making the next layer.

  2. In a small food processor, pulse all the cocoa layer ingredients until the walnuts are well chopped. Spread onto the cookie layer. Freeze for 30 minutes (this will help them firm up, making them easier to cut).
