Avocado Pesto Pasta (Keto)

  • 2 zucchini

  • 200 g chicken breast

  • 1 tbsp coconut oil

  • 1 avocado

  • 2 tbsp extra virgin olive oil

  • 1/2 cup of water

  • 1/2 cup of fresh basil

  • Salt and pepper


  1. Cook the chicken in a boiling water. Set aside

  2. Blend in a hand mixer avocado, coconut oil, water, salt and pepper. 

  3. Spiralize zucchini (shape of noodles). Steam cook 10 mins, rinse in a cold water and drain. 

  4. Mix chicken, zucchini, and avocado sauce, sprinkle with olive oil and basil.
