Mini soft focaccia

  • 125 ml warm water

  • 125 ml warm milk

  • 5 g dry yeast

  • 1 tBsp sugar

  • 1/2 tsp salt

  • 50 g olive oil

  • 400 g flour


  1. Soak the yeast in a mixture of milk/water/sugar. Let it rest for 3-5 min. 

  2. Add the liquid components into the flour and salt. Add the oil and knead the dough. Let it rest for 40 mins.

  3. Roll out a sheet of about 1/2 cm thick.  Form a disc with a 12 cm diameter cookie cutter (or a cup). Place the discs on a baking tray lined with parchment paper, cover with cling wrap and let them rise for an hour. When they have risen, form 5-6 dimples with your fingers.

  4. Sprinkle with fine salt and bake at 180 ° C for 20-25 minutes until golden brown.
